Buttermilk Pancakes

1 ¼ cups flour
2 teaspoons baking powder
½ teaspoon baking soda
1 tablespoon sugar
½ teaspoon salt
1 egg beaten
1 cup buttermilk or sour milk (may add 1 tablespoon of lemon juice to 1 cup milk to make sour)
2 tablespoons oil
Combine dry ingredients into a bowl. Combine egg, milk, and oil. Add to dry ingredients stirring just until moistened. Bake on hot griddle. Makes 8 pancakes.
