Hashbrown Turkey/Chicken Casserole

Ingredients:
1 package frozen hashbrown potatoes, thawed
2 cups sour cream
1 can cream of chicken or cream of mushroom soup
½ cup butter or margarine
1 large onion, chopped
2 cups grated cheddar cheese
2 cups leftover chicken/turkey cut into bitesize pieces

Preparation Instructions:
1. In small frying pan or in the microwave, melt butter and cook onion till soft
2. In a large bowl, combine all ingredients except chicken/turkey
3. Mix well
4. Fold in chicken/turkey being careful not to shred it as it is mixed in
5. Transfer to greased 9”x13” baking dish or very large casserole dish
6. If desired, top with buttered cornflakes or bread crumbs
7. Bake at 350F for 1 hour
