Scallop Potatoes

Serves: 5-6

Preparation Time: 25 minutes
Cooking Time: 1 1/4 hours
Difficulty: Medium

Ingredients:
6 or 7 medium size potatoes
1/2 cup chopped onion
1-2 tbsp flour
3 tbsp butter
1 1/2-2 cups hot milk
grated cheese(optional)

Preparation Instructions:
1. Peel the potatoes and slice thinly.
2. Spread about 1/3 of the slices in a buttered 1 1/2 quart casserole dish
3. Sprinkle with half the onion, and flour.
4. Dot with half the butter
5. Repeat layers ending with potatoes.
6. Add enough hot milk to come almost level with the top potato layer.
7. Sprinkle with paprika
8. Bake uncovered at 375F for about 1 hour, or until top is nicely browned and potatoes are completely tender, when tested with a skewer
9. If you want, top with grated cheese and return to the oven until cheese is melted
