Fluffy Pancakes

¾ cup flour
¼ cup cornstarch
2 tablespoons wheat or oat bran or wheat germ (optional)
1 tablespoon sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 eggs
1 cup sour 2% milk or buttermilk (to sour milk, add 1 tablespoon vinegar to 1 cup of milk)
2 tablespoons oil
½ teaspoon vanilla
Mix together flour, cornstarch, bran (if using), sugar, baking powder, baking soda, and salt into large bowl. Whisk together eggs, milk, oil, and vanilla in small bowl. Stir wet ingredients into dry ingredients just until combined.
Makes 9 pancakes (10 minute prep, 15 minutes cooking)
